Qamar El Din- Apricot Juice (Modified and Swapped Ingredients)

Qamar el Din gets a smart refresh with this diabetes-friendly version that’s lower in sugar but full of fruity richness.

Qamar El Din- Apricot Juice (Modified and Swapped Ingredients)
Traditional Ingredients:
  • 200g dried apricots
  • 1 liter of water
  • 1/2 cup sugar
  • Juice of 1 lemon
  • A pinch of rose water
Modified Ingredients (Lighter option with swaps):
  • 200g fresh apricots
  • 1 liter of water
  • 1/2 cup of erythritol, stevia, or monk fruit sweetener
  • Juice of 1 lemon
  • A pinch of rose water
Preparation Instructions:
  1. Cut the sheets of qamar al-din paste into small squares. Place the cut qamar al-din and stevia into a medium-sized bowl and add about 5 cups of boiling water.  Allow the ingredients to soak for about 1 hour until the apricots paste has dissolved.
  2. Add the lemon juice and orange blossom. With a blender, blend ingredients until they have fully combined and the texture of the juice is smooth.
  3. Pour the beverage into a jug and chill in the fridge. Serve cold with pine nuts.
